Walking tour of Noto
Breakfast at hotel and departure for Noto, a masterpiece of Sicilian Baroque! Most of the buildings, including churches and noble palaces, follow one another along the main street and are characterized by the honey tonality of tufa stone. Facades and balconies are all skillfully decorated by grinning masks, lion heads, putti and other embellishments.
Unmissable is Noto Cathedral, dedicated to Saint Nicholas and built in perfect Sicilian Baroque style.
Visit at Planeta Buonivini Winery for Wine Tasting and Lunch
After this walking tour we drive to one of the most famous Sicilian winery: Planeta Buonivini Winery, for a visit to the cellars, wine tasting and light lunch based on local products.
Noto was the third stage of Planeta's journey in Sicily. In 1998 the family founded the estate in the district which coincidentally has always been called ‘Buonivini’. This gave them the idea of coming to discover the winemaking potential of this country, cradle of Nero d’Avola, which after a long history at present remained almost unknown.
Here Planeta confronted the hardest and best challenge, to give again an identity and future to a great Sicilian wine producing territory. The beauty of these hills which slope to the sea and where the vineyards stretch between almond groves, has made Planeta carefully seek the closest integration possible with the landscape to provide minimum impact. Sustainability and hospitality in an informal atmosphere which cares for nature have, since the first day, characterized this project, with the building of the Cantina Invisibile and the restoration of the grape press and the Case Sparse.
Arising from the desire to minimize environmental impact, the invisible winery is the symbol of Planeta's presence in the territory of Noto.
The project, finalized in 2003, is still completely innovative and the expression of a perfect synthesis between respect for the territory, technical requirements and architectural design.
The aspect of the soft hills of Buonivini, the white limestone soil, the breezes arising from the meeting of two seas, create the best conditions to make the vines grow successfully and give rise to great wines. Here Nero d’Avola and Moscato grow together with almonds, carobs and olives, symbolic plants of the Mediterranean location.

Visit at the Winery Feudo Ramaddini for Wine Tasting
Then we drive to the second Winery of the day: Tenuta Feudo Ramaddini for visit and wine tasting.
In the vineyards of Feudo Ramaddini, declining rebuilds the bond gently from the plateau to the sea of Noto Marzamemi, with the past through the cultivation with the traditional method sapling, with the most modern method of farming in the counter. The result of a meticulous and of the highest level, the quality of the wines is also the result of the convergence of a number of natural factors such as climate benevolence, the incomparable work of light and geographic location. The influence of two seas, the Mediterranean to the south and the Ionian to the east, whose salt is laid down on the wind screws fact favors the enrichment and the ripening of the grapes. It is also determining the fertility of calcareous soil that hides a substrate of washing due to the presence of volcanoes in the area.

Visit of the Fisherman Village Marzamemi
Before going back to Siracusa a short stop in Marzamemi, one among the most beautiful 20 sea villages of Italy, to enjoy a nice walk and to take some pictures at sunset.
Enjoy the smell of the tasty fish recipes served by picturesque restaurants, the amazing sight of the sea, the narrow alleys and buildings that will remind you a medieval county.
Admire “The Tonnara”, the grid that the local fishermen use to catch several samples of red tuna that is immediately sold to restaurants.
The Tonnara is also an ancient palace that in the past served to shelter the great ships used to fish tuna .
Over the years, it has been turned into an evocative restaurant and a suite with a stunning sight on the sea.
However, Marzamemi is also a Sicilian town with a strong tourist relevance, where you can discover a quiet and wonderful landscape, an untouched nature and the impression that time has stopped forever.
Later, you'll be driven to the hotel in Siracusa.

In the evening Welcome Dinner in one of the best and fancy restaurant of Ortygia: Regina Lucia, a Micheline Guide Restaurant offering Sicilian cuisine with a contemporary twist, served in an environment of amid tufa arches and designer-style furniture in its superb location in Piazza Duomo.

Truffle Hunting Experience
After breakfast departure to enjoy the experience of walking in the forest with a local experienced truffle hunter and his trained dog.
Follow the dog hurriedly through the forest as he sniffs about and experience the surge of excitement as he starts digging for these edible treasures. While hunting, you can enjoy the charming Sicilian countryside breathing pure air in a gorgeous wood. The walk is very easy and requires no particular effort.
Truffle Cooking Show and lunch in a Watermill
Once some truffles have been found, you will be treated with a delightful meal that incorporates the fresh truffle you just discovered along with a wine tasting of local area wines.
A sightseeing drive will lead us along the country side to a wonderful location, an ancient watermill, surrounded by streams, waterfalls and small lakes with breathtaking colors where an experienced chef will welcome us in the kitchen and teach us how to clean and use the truffle, a natural wonder, perfect for enriching many dishes and transforming taste into an experience.
Following, a truffle based menu will be prepared for us, paired with local delicacies and excellent Sicilian wines.
Later we drive back to Siracusa. Evening at leisure.

Walking tour of Ragusa
Breakfast at hotel and departure to Ragusa to enjoy a walking tour of one of the most fascinating towns in Sicily, Ragusa, essentially built in Baroque style, has caused many a visitor’s jaw to drop as they first set eyes on the lower part of the town.
In Ragusa area there are several wineries producing memorable Sicilian wines: today we will visit two of them.
Visit at Cantine Gulfi Winery for Wine Tasting and Lunch
In the first winery we visit the cellars and have a guided tasting of the estate's outstanding wines led by an English-speaking winery expert.
Here is the purest essence of Sicilian winemaking: the alberello (small tree vine). This is the only form of vine cultivation that allows – in such an extreme climate - to obtain highly refined and complex wines: Alberello perfectly integrated with the natural environment; and it does not need invasive chemical inputs or irrigation. An alberello vineyard is difficult to manage since its cultivation is entirely manual: this is where the journey in our land begins.
The wine tasting will be followed by a delicious lunch, hosted at the Locanda Gulfi, an ideal place for very enjoyable wine and food tasting, other than location very appreciated for romantic dinners, banquets and receptions.

Visit at Azienda Agricola Occhipinti Winery for Wine Tasting
After the lunch we visit a second winery nearby for having another wine tasting: the Azienda Agricola Occhipinti, founded by Arianna Occhipinti who is giving to the art of wine making a special meaning.
"Accept the diversity of soils, the slope of the ground, the altitude, and the originality of a vineyard. To accept means to respect. To respect the earth and its balance. Respect the vineyard with skillful gestures of a sensitive agriculture To respect the fermentation through the use of local yeasts. Respect the wine as if it was a person. A person who takes with him/her, a world, a history, an atmosphere. And it tastes like the land where it was born from. A wine that, in its harmonies and roughness, talks about the land where it comes from and also about me."
The vineyard here enlarges and it stoops onto the limestone base of the area, the vineyards are twenty years old if not more, and the court on which the wineries raise themselves is able to trap all the strength of the Ibleian sun. It is located in what was the oldest wine route ever documented. That road was used by generations of farmers to bring their own wine to the coast.

Walking Tour of Siracusa
Today you will be guided at the discovery of Siracusa, that belongs to the Unesco heritage. Siracusa was founded by colonists from Cornith in 735 B.C. and once the most important competitor to Athens.
After breakfast transfer by Taxi to the Archaeological Park, highlights of which are the Greek Theatre, the Roman Amphitheatre and the Paradise Quarry. The resulting park contains some of the most extraordinary monuments that classical antiquity has left us and, given their degree of interest and importance, has few equals elsewhere in Italy. Then stroll through the streets of Ortygia Island, the heart of the city center, to visit the Dome. This delightful pedestrian square is home to the wonderful Cathedral built on the site of an ancient Temple of Athena as can clearly be seen from the original Doric columns that were incorporated into the building’s main structure.
Later to the colorful daily Street Market, which sells a fantastic array of fruit, vegetables, fish and meat.

The name of this restaurant refers to the twelve fountains which adorn the outdoor terrace; in the evenings, guests can also dine by the swimming pool or, in inclement weather, indoors in the elegant dining room.
You'll be able to enjoy the remarkably creative interpretation of typical Sicilian specialties such as shellfish from Mazzara, pork from the Nebrodi, black truffles from Palazzolo, pistachios from Bronte, walnuts from Etna and sausage from Linguaglossa.

Visit at the Cottanera Winery for Wine Tasting and Lunch
After breakfast traveling through one of the wine roads of Sicily and crossing large expanses of vineyards (Etna D.O.C.) we will arrive at Castiglione di Sicilia, a medieval village perched on a hill overlooking the Alcantara valley. The tour includes a walk to the Belvedere of the Castello di Lauria (of Norman-Swabian origin dating back to the twelfth century and built on the highest cliff of the medieval village).
Then we drive to our first winery to visit the cellars, wine tasting and light lunch based on local products.
Cottanera Winery has never lost the bond with our land. In the vineyard nearly all operations are carried out by hand by a team of 25 women. And their work in the winery is driven by the love for the wine and the environment.
The wine takes its power from Mt Etna, since the vineyards grow on lava soil, 700 mts above sea level. The vines and the volcano’s breath are intertwined and become expression of a unique and fascinating land. It is the purest expression of the volcanic territory and tradition. The work both in the vineyard and winery, is meant to create fine and well-balanced wines.
The red wines are fresh and full-bodied, with well-balanced tannins, the whitewines are fresh and mineral with floral and citrus hints, the rosé has floral and fruity hints blend with the territory specific freshness and minerality, the sparkling wine is a Metodo Classico Brut and ages 38 months on yeast and 12 months in bottle.

Visit at Tenuta delle Terre Nere Winery for Wine Tasting
After lunch we visit and enjoy another relaxing moments surrounded by nature while sampling excellent wines in our second Etna Winery.
Tenuta delle Terre Nere is the fruit of over 30 years of passion and work in the world of fine wine.
And an extraordinary location, as well - this "island within an island" that is the Etna - where nature is prodigal but also severe. And here the company tries to express as purely as possible the refined and multifaceted microcosm of this ancient volcanic land. With respect, care and hard farm work, always in organic balance.
The estate's philosophy is simple. Given an extreme climate, in order to obtain the best and most consistent ripening, their attention must focus on vineyard management. The finest workmanship in all aspects of viticulture is the first thing that sets this winery apart. And what enables them, bringing home exceptionally fine grapes, not to be invasive in their cellar work. A work best described as aimed above all at expressing the character of our varieties in their specific terroir.
